Öjebyröra

You’ll need: 2 packages of large croustades or 1 package of mini croustades
Ingredients:
250g Peeled crawfish tails
1.5 dl Mayonnaise
10g Chives
1 small red onion
50g Grated Präst or Västerbotten cheese
1 pinch Caraway seeds
(1 cl OP Anderson)
Salt
Black pepper
A small bowl
Hand blender
Tip: Always start by picking out all the ingredients and tools you need, and preheat the oven!
STEP 1
Squeeze out any excess water and then roughly chop the crawfish tails. Finely chop the red onion and chives. (If you want to make your own mayonnaise: Crack a whole egg into a bowl, blend together with 1 tsp Dijon mustard until it starts to turn white, then slowly pour in 2 dl rapeseed oil while blending).
STEP 2
Mix together the crawfish tails, mayonnaise, red onion, chives, caraway seeds, grated cheese, (1 cl OP Anderson) in a bowl, and season with salt and black pepper to taste.
STEP 3
Fill your crusts, garnish with chopped dill, a sprig of dill or radish. Serve!
